Continuing the trend for recipes: Coconut rice
mince one medium onion, two cloves of garlic, and 12-15 leaves of fresh basil. thinly slice a stock of celery,and put all this into a 4l pot with a tight fitting lid, and saute it in 2 tbs of veg oil over medium-high heat.
Add the scraped contents of 10 green cardamom pods, one clove, a bay leaf, and a pinch of red pepper flakes. Stir a bit more, and add 2 cups of converted rice (chefs trick: uncle bens converted rice makes the best flavoured rices because it doesn't get mushy, but still absorbs flavour. For boiled rice, use long grain or basmati, but for these kinds of recipes, you can't beat benny)
Stir the rice and veggies around till the rice is coated with the oil, and it starts to smell really good. At this point add a cup of dry white wine, if you have it, and let that bubble up, and then add a can of coconut milk, plus enough water or chicken stock to make 4 cups.
Bring this to a boil, and let it bubble, stirring occasionally to make sure the rcie doesn't stick to the bottom. When the mixture starts to get a bit thick (ie much of the water has been absorbed by the rice, about ten minutes), bang the lid on the pot and stick it in the oven at 300 degrees for 20 min.
taste test to makes sure the rice is done,. then fluff with fork.

the only time i have "gotten lucky" at the bar was when my girlfriend acted as point woman for me. i am so clueless. one thing about being a child bride and staying married forEVER is that i missed out on all the potential debauchery that was the 80's. damn.
