I've always felt like a hypocrite eating meat. I consider myself an animal lover yet I would have no problem eating a steak or pork chops or crazy amounts chicken. Most of us are disassociated with where our food comes from that we don't really care about what it entails to grab a ribeye and some chicken breast from the local food store. I'll never preach to people or tell someone how to live their life. As a way to reduce my carbon and karmic footprint I'm taking a more plant based approach to my diet. I'll never claim being vegan cause I wont give up meat and dairy entirely, itll be a cheat meal here or there. This week only 3 out of the 17 meals I ate contained any kind of meat,I wanna bring it down to just once a week,with the help of purple carrot (the vegan version of hellofresh or blue apron) and the "Thug kitchen" cookbooks,I've been eating meals that taste incredible. A staple has been a "no death,no dairy mac and cheese" with field roast grain sausages made with chickpea pasta,I fucking love it. Part of this is an experiment on my end,seeing if I can continue to build muscle going plant based. If anyone has any high protein meal prep ideas I'd love some suggestions. Here are some of the meals I've eaten this week.
Smokey portobello tacos w/jalapeno lime cashew sauce and Spanish rice
Smoked cashew and chickpea salad sandwich
Lemon walnut risotto w/roasted broccoli and yellow peppers
Skillet fettuccini w/tomato "butter",chickpeas and asparagus
Spaghetti pie w/spinach pesto tofurky sausages
Summer squash tacos w/roasted corn and tomatillo salsa
