Today I want to share with you my receipe of mirabelle plum jelly.
So, first of all, be lucky as I am and find neighbour who will bring you kilos of fruits and veggies everyweek, all for free, because he works in that fiel and don't want to throw what is not sold in the bin. Or you can buy them at the fruit store and grow them in your garden. Today, he brought me 5 kg of mirabelle plums.
Once you have rinced the fruits, throw them in a big cooking pot, or even better, a cauldron if you feel like cooking some magical potion. Add some water to prevent the fruits from burning, not too much, just enough to cover the plums. Do not cover the pot and turn on the gas cook, while keeping an eye on the fruits (use a wooden spoon to turn them around sometimes).
After 20 mn, the fruits should be cooked. Put them all in a big sieve over a big bowl, and press them to collect the juice. Then let the juice go down by itself during at least 2h.
Once you've collected all the juice, put it back in the cooking pot and add some sugar (depending on how sweet you like your jelly) as well as lemon juice. Turn the cooker on and let it simmer for at least 30mn.
You can check that your jelly is ready by using a very cold little cup where you drop a little bit of jelly. Tilt the cup slowly: if the jelly stops itself quickly, then it's ready! if not, cook it longer! Then, you can skim your soon to be jelly and put it in little pots. Wait until it's cold and then enjoy your mirabelle plum jelly for months in yoghurts, on bread, on cakes....
