I will leave the recipe for my vegan gingerbread here, under my delicious photo. maybe it will be useful to someone?)
🎄For glaze:
🔸 2 tbls of aquafaba (nut decoction). It needs to be whipped, to a resistant foam
Then gradually add 🔸125g of powdered sugar. And 🔸1/2 teaspoon of lemon juice
When the glaze starts to be dense and standing, put it in the refrigerator for 4 hours (you can do it at night). For density.
🎄For orange dough:
🔸 One orange and 🔸one small apple. Cut and blend. Add 🔸80-100 g of sugar.
Mix 🔸400-450g of whole-grain flour with 🔸50 g of corn flour. Add 🔸1/2 teaspoon ground ginger, 🔸1/2 teaspoon of soda, and 🔸cinnamon to taste. Mix with fruit puree. Add 🔸60ml of vegetable oil.
Knead the dough. And put it in the fridge for a few hours. You'll get a tight, malleable dough
Then stretch it, use baking moulds, in the form of a Christmas tree, a star, a man, everything you love. Put on parchment paper and put it in heated oven to 150 degrees for 20 minutes
When the gingerbread cools down, fill a confectionery syringe or paper cornet with glaze and decorate!🥰

I'm not vegan. But I definitely try everything my ukrainian wife would make me. ;)

I have never gotten into baking, but I'd definitely give it a taste if I had some.
