I'd like to thank @rambo and @missy for asking us this question, as in these hot summer days I'm totally in love with this dish and I'm bothering EVERYONE by telling them how much I like it 😅

It's a cold salad with legumes, baby onion, tomatoes (I love the cherry ones), olives and any other thing you'd like to use.
I especially love lentils, so here is my version:
1 or 2 cans of lentils ready to eat
1 can of beans ready to eat
1 baby onion
5 to 7 cherry tomatoes
dry red chilly pepper to taste
salt to taste
lemon zest to taste
extra virgin olive oil to taste
Cut the tomatoes and leave them into a bowl, add some salt and mix, so the tomatoes will release all their tasty juice, carefully rinse the legumes and add them to the tomatoes (never use the can legumes with their water, it's too salty and it's not healthy), add the chopped baby onion and season with everything you like, remember to add the evo oil at last, so the salt can melt into the tomatoes water and everything will result more smooth.
It takes only 10 minutes and, adding some slides of bread, it's a perfectly balanced, healthy and tasty meal.
To your taste, you can add cheese (in this kind of dishes, I love goat or sheep cheese), other vegetables (raw or grilled) as carrots, peppers, zucchini, aubergines, quinoa, avocado, cucumber, etc...
