i get a call today from my mom asking me how i was feeling..then all of a sudden she starts crying....
She then tells me ..My Uncle Mario her older brother..had passed away..i didnt really know how to react and all i could say i was sorry and that i loved her.. i sat there in the living room in shock then realizing which brother of hers it was...he was second oldest ..he and his brother eduardo were the only ones who were still able to cook like my spanish grandmother..then had her palate...her knowlege of flavors her cooking style ..something my mother always talked about when ever she would make something that abuelita also used to make..and explain that her brothers knew more and cooked better than she did.
Back in1997 i spent a month in the PHILIPPINES and hung out with my uncle mario..we would start our day off taking a shot of gin with our strong coffee to counter balance the jitteryness of cafeine..then off to the market for the days food and back to the house to open up the Soup, bbq,and Sari Sari store ( think of a miniature liquor store) he had opened up on the side of the house facing the street outside of the property gate.
We would eat our breakfast and the cooking madness would begin all being ready by 12:30 noon ..right on time for the drivers, street folk,locals and business people who would patronize his place amongst the many others along the street because not only was his food waaaaay better than the others....he had a big fans running so although its outdoor eating on wooden picnic benches and tables...there would be this nice air blowing your way so that you could eat without sweatin like a boss hog. after lunch his wife would take over for the dinner session and we would go off to MARIKINA stadium...for the ROOSTER FIGHTS....
I lost all of the recipes he gave me..and now i feel like i should go back to pay my respects...i just need to get my health back in order..
Rest in peace uncle mario..( aka mayong to all his friends)
