Veggie Burgers and Making Out with actors.
Who was right that they would read for the hooker? ME! Who got to make out with an actor while reading the scene? Oh yeah... Seriously, more guys need to audition for roles! I don't understand it!
Anyway, here's the world's BEST veggie burger:
1/2 tablespoon of vegetable stock
3 cups uncooked quinoa
4 1/2 cups cubed zucchini
4 cups spinach
2 cup roughly chopped sun-dried tomatoes
1 can corn
1 can black beans
1/2 cup of white bean paste (northern bean puree with salt and pepper)
1 tsp garlic powder
1 tsp paprika
2 tbsp hot sauce
1 1/2 sleeves of Ritz crackers (but I used 1 box Kroger value brand)
flour
almond flour
Cook quinoa in 6 cups of water and vegetable stock. Drain quinoa when the kernels have bloomed. Saute zucchini and spinach until golden brown and soft, cook with oil and salt and pepper. Drain vegetables. Crush Ritz crackers into fine pieces. Now, add all ingredients in a large bowl together, and make palm-sized patties. Make an equal part mixture of flour and almond flour and dredge patties. Refrigerate for at least an hour to harden patties. Then grill, pan fry, bake - however you want to brown your patties! Serve with cheese and ketchup (my favorite way).
