I'm pretty interested in what makes a man a man (besides having a big, *ahem*. Or being Teddy Roosevelt, who was a total G). It's a blend of physicality and disposition that I think can be pretty different for each individual. It's sort of a "fit" thing. Nonetheless, it's incredibly important to most guys. Not having the confidence that allows you to define yourself can cause dissatisfaction in a whole bunch of places (relationships, workplace, interactions with strangers, etc). However, I think one of the manliest things ANY guy can do is:
Know what you want AND go after it.
Whether it's in your career, in a restaurant, or in the bedroom, knowing what you want is sexy. I think a lot of guys under-appreciate this. But if you ask yourself, "what do I want" in every situation, and you can effectively communicate that to others, I think you're well on your way.
