Caramelized red onions with Bonarda wine and cinnamon โค๏ธ๐ง
I cut the onions into rings and put them in a very large and high pan with enough water to almost cover them by half (not too much as the wine will also go inside) and some extra virgin olive oil. Pour 3 generous table spoons of raw cane sugar, a pinch of salt, bay leaves and a glass of that delicious red Bonarda wine. Wait for all the liquid to dry and according to your taste and the mixture add more sugar if it is not caramelized enough, and some cinnamon.
I use them in aperitifs bruschetta bread or on pizza with Taleggio cheese ๐
