I'm excited about this topic! I love to cook!! So my favorite recipe is a base that I can make a bunch of other stuff with. Depending on what you add in, this is a great Paleo recipe! Full of vitamins, flavor, and homemade goodness <3
Base Recipe: 1lb. Spicy Sausage, 1 large or 2 small Zucchini, and 1 bunch Kale. Brown the sausage with garlic and onions, shred the zucchini and kale, add to sausage. So that's the base. I'll cook this up and store batches of it for later in the week. It makes weeknight dinners go much faster!
From there I can make soup: put in stock pot, fill with water/stock and simmer all day. If I'm making soup, I'll add a couple of diced potatoes and second bunch of kale.
Or breakfast: In a skillet, add eggs and diced bell pepper to the sausage mix. Sometimes I'll put a fried egg on top instead or add sweet potatoes.
Spaghetti/Lasagna: Brown 1/2 lb ground beef, add to sausage mix with bell peppers. From there you can add that to a jar of homemade or store-bought sauce. Add spaghetti noodles. Or for lasagna, layer on lasagna noodles with a ricotta/cottage cheese mix. Top with mozzarella cheese and bake until bubbly.
