So, I can bake really well, but cooking anything other than a baked good is a tragedy. I will remedy this by making something from scratch once a week.
This week I made some cilantro lime shrimp.
single serving:
12-15 shrimp, large-ish, peeled, cut down the center and deveined.
1 clove garlic (or more if you're warding vampires, or really like garlic), finely crushed and chopped
2-4 tablespoons cilantro
1/4 lime
1 tablespoon olive oil or butter
Heat up a big wide pan, add oil and make sure it's swished around a bit to cover most of the bottom.
Drop in the garlic, shake that up a bit so it's evenly distributed, put in shrimp on their sides.
Saute! You can either toss them about in the pan, or wait until they're turning opaque, and turning them over with tongs, as long as they come out uniformly cooked.
Put them in a bowl (possibly one with a lid.), drain any excess oil.
Drop in the cilantro, and squeeze the lime into the bowl, and mix it up. (or if you got a bowl with the lid, put the lid on and shake it!)
Yay you have shrimp!
I've just discovered how low calorie shrimp can be, as long as it's not breaded and deep fried (however tasty that may be). I used 1/2 tablespoon olive oil, and the total calories came out to about 150. Awesome for part of a lunch or snack.
I've learned that it is totally possible to enjoy full-fat foods and still lose weight. I'm down 45 so far. 50-60 more by summer. D:

Maybe you could give me some other pointers on losing a few pounds. I'm down about 45 too, but i've stopped losing it.
Join loseit.com. Track absolutely everything you eat. Of course, I've read that men need to concentrate on exercise more, but giving your body a calorie deficit helps a ton. I only eat 1400-1530/day.
