my comfort food recipe:
step 1- wash potatoes--as many as fit in the pot
step2- cut into small pieces (so they cook faster) may be cube-ish or wedgeish or w.e
step3- put in pot with water, salt optional
step 4 put on lid, wait for boil, test potatoes for doneness after 15-20 min depending on size of pieces
step 5- drain
step 6- eat
i like to eat them out of a big mixing bowl with assorted condiments on a small plate. my condiments of choice:
trader joe's mayonaise
salt & pepper
spicy brown dijon mustard (i love mustard)
also good cold, though really amazing hot.
ate the above with baked red onion slices.
