I'm working on my first turkey. My sister wants smoked turkey for her company's holiday party. She brought me a "practice" turkey. Of course, it's wrong; I need something minimally processed, and this has shit in it, including salt. So, I had to cut down on the salt in my "brine"; fuck if I know whether it's right. I'm not gonna taste the raw turkey to see how much salt it already has in it. Here's what I did....
1 cup salt
1 cup light brown sugar (i'd've used dark, but I didn't have it)
4 tsp minced garlic
1 tsp peppercorns
1 tsp whole cloves
3 Bass ales
and about a gallon and a half of water to cover the turkey.
I heated up everything except the beer in about a quart of water. Then I poured it into a big stock pot and added the beer and water. Refrigerated it then threw in the turkey. It's gotta soak about 24 hours, then it's supposed to sit in the fridge another 12 hours, supposedly to absorb the moisture, but I thought that's what it was doing while it was soaking.
So, I'll start smoking it sometime Sunday. If you never hear from me again, you know what not to do.
