It was an ok week... my doctor is such a moron! She thinks I should go see a rheumatologist (because my joints hurt) and a shrink (because it depresses me).

here goes.
2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup firmly packed light brown sugar or natural sweetener
1/4 cup maple syrup
1/2 cup corn oil
Egg replacer for 2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups semi-sweet vegan chocolate chips
1. Preheat oven to 350, and lightly oil one or two baking sheets
2. combine the flour, baking soda and salt. set aside
3. combine the brown sugar, maple syrup, corn oil, egg replacer, and vanilla and mix until blended well
4. Add half of the dry ingredients and mix well, then add the other half of the dry ingredients and do the same, fold in the chocolate chips. Drop the dough onto the baking sheets, a little or a lot, depends how big you want your cookies.
5. Bake for about 15-18 minutes......
