I'm stoked for the summer. Tryin to get myself out there as a respectable, young butcher who cares about local, sustainable agri-business. I'm planning an event at either Whetstone or Goodale Park where I will have a hog roast and raw oyster bar with (local pig) with locally grown greens to compliment. I am going to work with Columbus Brewing Company and a new brewery that Colin (owner of Bodega and Barrel and Bottle at the North Market) to get some beverages. During the event, I'll break down a lamb, and have an auction for different cuts (loin, shoulder, shank, rib, etc.). It will take some work, and I may not be able to do the alcohol, but we will see.
I'm planning a similar even in Portsmouth, New Hampshire with my friend, Austin.
Should be bitchin.
And, here are some lollipop lamb chops I cut for a customer yesterday.
