hey i just read your post on the veggie board about lasagna...
this is a great ricotta substitute
1 1/2 lb. firm tofu
1/4 cup fresh lemon juice
2 tsp dried basil leaves
1/2- 1 1/2 tsp sweetner of your choice
3/4 tsp salt
1/2 tsp garlic granules
mash all ingrediants together until texture of ricotta and store in fridge
this is a great cottage cheese substitute
1 lb. firm tofu drained
2/3 cup vegan mayo
2 tsp onion granuals
1 tsp garlic granuals
1 tsp salt
1 tsp ground dill seed or caraway seed
put all ingrediants in bowl and mix thoroughly store in fridge
i hope either of these helps I too just went vegan... these recipies are from the uncheese cookbook... if you don't have it get it... it rocks. cheese was so hard for me to give up but this book helps

The main reason I dislike snow is because of the ice and slush (and oil, if you live in the city ewww) it leaves for you in the morning. Angelina Jolie is a really good actress but I still wish she'd play some more fucked-up roles. I miss her in those films, I guess because I can relate. Beyond Borders really isn't my kind of film but I'll have to keep that one in mind, It does look interesting.
