I would highly recommend Hanoi and the North. If you really want to see Saigon, then your idea of flying to Saigon then overland to Hanoi could be a good route. The Re-unification express is probably the best way to do it. It costs quite a lot given the cost of living over there, but it's relatively hassle free. (I think it cost about $100 for us both from Hoi An to Hanoi.
