just got back from a redonkulous dinner at Trotters in Chicago. Highlights: squab on an oxtail reduction/ragu, lamb roast with lamb sweetbreads and smoked lamb tongue in a collard green extraction, and for dessert(s) chocolate tart and an apple beignet thingamajig.
what was equally amazing was the vegetable tasting menu, which one of our party had.
and then we got to hang out in the kitchen asking questions of the chefs and even a tour of the wine cellar. best meal since that magical night in napa at the french laundry. going to sleep now and have happy dreams. did i mention that we had wine?
