I made the most awesomest quesadillas tonight, maybe not too traditional, but with a very nice eastern mediteranian/greek influence. I fried up some red onions, black olives, and bell peppers with a bit of olive oil, rosemary, thyme, garlic, salt, and pepper. Then I put a tortilla shell in another pan, put on some crumbled feta cheese (ok, a lot), added the veggies, folded it over, and let it bake. Manalive was it ever good. Recommended with tzatsiki instead of salsa
