I traditionally take one month a year to quit all of my vices (alcohol, tobacco, caffeine) to ensure I still can. Usually it is March... I call it The Long March, har har. This year I chose the shortest month, February... and 2024 is LEAP YEAR. I'm getting fucked out of an entire day. Wish me luck, please.

Pasta is SO easy, right? You just need to boil water? WRONG.
Correct pasta takes constant attention. You need to cook it al dente... you have to check the noodles every few minutes, to be sure they are not sad and soggy. They must be slightly undercooked... they must have BITE. Salt the water before it boils.
Your sauce has to be on point. Good...
