its friday. its friday. weeeeeeeeee. i made meatloaf at the school yesterday. then i came home and made my own version. its pesto-turkey meatloaf with peppers. it sounds disgusting, but it was fucking delicious.
3 lb ground turkey
6 oz. finely diced onion
3 oz. finely diced celery
3 oz. finely diced red peppers
6 oz. pesto sauce (see cookbook)
3 oz. pine nuts (ground or whole)
1 tbsp. salt
1 tbsp. pepper
1 tbsp. worcestershire
2 eggs
so, sautee the onion, celery and peppers in oil until the scent from the peppers releases.
mix everything together, saving two ounces of the pesto to spread on top of the meatloaf.
put into an oiled meatloaf pan. spread pesto on top. cook at 350 until temp is 160, about 90 minutes. yum.
