things are going well out here. Kept really busy the last few weeks designing an Advanced Firearms Course from scratch and getting some instructors qualified to teach it to the students. It took a lot of work but it felt really good to get it done. There's a fair chance that it'll never be implemented because the Italians we work with are dogged in their pursuit of mediocrity and are mostly only interested in pushing out large numbers of students, despite their readiness (or lack thereof. that's the most frustrating thing about working out here). But we're fighting for it and so are the Afghan instructors who really want to train these students.

Lasagne roll-ups are the easiest and most gratifying thing you can ever make, ever.
Ingredients:
- jar/ can of pasta sauce (or make your own if you've got the time or inclination)
- can of lentils - drained & rinsed
- box of lasagne noodles
- tub of cottage cheese
- grated mozzarella cheese
- parmesan cheese
Step One:
- in a big pot, boil water and cook lasagne noodles until tender. Make sure when they're cooking to stir them so they don't stick together
- once they're al dente, drain, then put them back in the pot and toss with olive oil to keep them from sticking
Step Two:
- in a pot on the stove, heat up pasta sauce and add lentils (they make the sauce "meatier")
Step Three:
- on a cutting board, layout a few noodles
- spoon on them heated sauce and some cottage cheese
- roll them up and affix them with a toothpick, then set them in a muffin tin
- once you've got the muffin tin filled with rolls, top them with more sauce in the middle, then add the mozzarella & parmesan cheeses on top
Step Four:
- heat in the oven on about 350 degrees until everything gets all bubbly
