Ok so it has been an eventful few days. I had my performance review and it went amazingly well. The GM got a little misty telling me how awesome I was so I got a little misty listening to how awesome I was. My negatives were I do too much and and I should make people clean more. They think that I should delegate more of my prep but then we talked about how every time they schedule me help in the evenings they take them to bail out the line and how I have to plan my day expecting to have my help ganked so I get stuff done myself. They agreed to work on that too. Blah blah blah. And I got a fat ass raise. Pretty much a 12% raise. I knew I was going to do well but that was about three times what I was hoping for. He said I would be happy and I was. I knew he would do right by me with out my having to ask. Then today we bought (and went and picked up this morning) an infrared double drawer broiler. So awesome I can't wait to cook on it. I have never cooked on infrared before but I love a drawer broiler. They start at 12,000 he got this one used for 4,000. 800+ pounds. Even on wheels it is a beast to move.
The girls are gone to South Dakota. A bit jealous but I will enjoy my solitude. Tomorrow I open so I won't do much. I get out early on saturday so I plan to go out honkytonkin' for at least a little bit. They won't be back til late sunday so I can sleep in. I haven't gone out and gotten torn up in a while. I hope I still have drinking buddies in town some where.
The wife left me a good night note on her way out.

Today marked my year at this job. It has been a long year but I do like it most days.The owner was in talking shit this morning so I told him it was my year date and asked him if that meant I got my 401k. He said no (but it is in the works supposedly) but he said that I needed a performance review. He was all smiles and said I would be happy, which hopefully means a decent bump pay wise. He knows who gives him the most bang for the buck.
The girls are getting ready to go to South Dakota on thursday for Schmeck Fest. I am so jealous they are going without me but the sous beat me to the request book. At least I will get a couple days to myself. I hate to sleep alone but I could use the silence for a while.
We got our taxes done today finally. Hooray for kids at tax time. There will be slaughter in the bill basket. The land line phone will die of boredom from lack of calls. Everyone will get paid. I had hopes for this one but they are dashed. After the chunk I just put into fixing the wife's car it will have to last a while longer. My tv will remain a little fucked but watchable. But everyone will get paid. I think SG just takes theirs automatically or I would probably owe them money too. Haha.

Busy times. Saturday I had a tasting for a Pakistani wedding. That was a first for me. I have cooked a lot of Indian food but never Pakistani. It is always a bit unnerving to cook food from a different culture for people of that culture. The couple was very cool and the parents warmed up once I brought out the food. It is always the mom you need to win over a she was visibly astonished that a fat white guy could make what she asked for. The owner was also skeptical that I could pull it off. He left me alone to do the tasting but came in when it was happening to see how it went and to make sure we could make money on it. When they not only loved every thing I made but wanted to add more things he heard cash registers ringing in his head and dollar signs in his eyes. It will end up being one of the pricier weddings of the season partially because the halal meat is twice as much as regular and partially because it is so labor intensive. They didn't bat an eye at the price we had come up with and the addition will make it close to forty bucks a head.
I got off early enough to eat with the girls and the go to a hockey game. The girls had fun and the Błaze won. 5 to2 is a pretty high scoring game for hockey.
Today is just a lazy day. Biscuits and gravy for breakfast. Bad movies on tv. Typical Sunday afternoon. Peace out SG.

I managed to go into work and do the order without getting roped into any stupidity. Hooray for me. I did a minor friend purge. When I noticed that I had surpassed 100 friends I thought there was no way that could be right. I just dumped people whose accounts were inactive and whose blogs were two years old. I kept a couple of my favorite inactive people just in case they resurface. Since I never say no to a friend request I had a few one month subscribers and one set hopefuls on the list that weren't coming back and never really interacted much in the first place.

Ha I almost posted my new blog in my comments again. I will never learn. Anyway, life is goodish. Saturday we got tore up and it was a blast. We woke up late and so did the girls. Unfortunately the dog woke up right on time and without the girls to let her out she crapped on the floor, which sucked but you can't really blame her. her routine was disrupted. So that was not the best start to the day but it got better. We had big breakfast and I introduced the girls to one of our kitchen favorite breakfasts at this gig which they call chilequilles. It is essentially cut up corn tortillas cooked with caramelized onions and salsa water. We make it all the time in the mornings and eat it with fried eggs and avocado. The wife and the Ziz were not fans but Ms. Sun ate a bunch and so did I. My success rate was low so that won't go into the family rotation but it was worth a try. It is not a dish with a lot of eye appeal but if you can get past that it is great breakfast food especially if you aren't going to get a chance to eat again for a while. After that I had a nap and the girls played in the puddles outside. I made them tiny burgers for dinner which everyone liked.
Work is back to being crazy. Sunday was my only day off last schedule and this one, one of my days off is already a lie because I have to go in for a while to do the order. Saturday I have a tasting for a Pakistani couple which is exciting because they want to eat cool food but it sucks because I have to source Halal meat which is hard in the mid west. Today we did the funeral buffet for a local fireman killed last week in the blizzard helping with a wreck. It was a huge ordeal with hundreds and hundreds of people and firetrucks and bagpipers. While I was happy to be a part of it it was one of my least favorite type of parties which is a party with and undetermined menu for an unknowable number of people that goes for an inordinately long period of time. Funeral or fund raiser that kind of thing sucks balls. Funerals I don't mind. I grew up with a lot of death. When I was born most of my great grandparents were still alive and all of my great aunts and uncles so I went to all their funerals plus both my grandfathers on my mom's side were morticians and funeral directors. We spent part of our summers growing up as the kids that put out all the flowers at the services and then picked them up, put the in a van and beat the funeral procession to the grave site so we could put the all out again around the grave. On top of that my first and eighth grade best friends wee killed in car wrecks and my favorite cousin died of CF when I was in Jr High. Funerals are old hat to me. we were talking about it today and a few of the people at work had only been to one or two funerals in their lives. The things I love about a good small town funeral is the potluck afterword. I don't mind cooking for them but I always feel like I am robbing people from the real experience of an old church lady bereavement buffet.
Well I should go tend to the wife. We played a wicked game of Wii Tennis with the stakes of winner gives first head, I lost. Damn it.

Drunk. The wife is in good spirits as well. I just need to get beyond the last entry to something less dreary. Pretty chill day at work. Did a tasting for a quaker couple having their wedding at the old meeting house wher I cook for a week every year. It was kind of odd to blend those two worlds. I am out before I start to ramble.
So yeah yesterday sucked. I had to fire one of my favorite guys( the one that got everyone calling me chingon) and for kind if a bullshit reason. The gm thinks she caught him adjusting his clock in time which is essentially stealing. He really shouldn't be able to do that and he says he didn't know how to do it but he is on camera coming in at7:30 and his clock in time was 7:11. That is 19 minutes for all you math majors. That for a guy making 10 bucks an hour is about three dollars. I know that it is more the principle of it than the actual transgression but I would rather pay the three bucks and keep my work horse. I would feel better about it if I could prove that it actually happened but there really isn't a way to know for sure who changed his time. It could have been the other opener trying to help him out. The other guy is kind of a jackass and I have been waiting to fire him. It also bugs me that I got stuck doing the dirty work again. The last couple execs I have wirked for have been total pusses when it comes to firings and stuck me with it. This is the second guy I have fired here and this exec is useless at it. I did all the talking and he just stood there all teary eyed. At the dub tree I made it an art talking people into quitting so I didn't have to fire them. The exec would say " I want this guy gone, make it happen. " and in a couple days I would have their notice in writing. At this place they don't afford me that luxury. Everything has to be a huge blow up which is not really my style. I don't need to yell or spew forth a bunch of self righteous indignation just a calm discussion if the facts ending with "give me your keys". I guess I'd rather be fired by me.
That is one thing, I haven't really ever been fired. I was once not hired on to a temp job at a lumber yard but that wasn't ever going to be my kind of place. I have only walked on two jobs and one of them was doing laundry at a hotel which was disgusting and I don't blame me. The other was a cooking job but the chick that ran the place decided to get drunk instead of do payroll. I didn't realize til that job how much I hate it when people fuck with my money. All of my New Mexico jobs fucked up my money at least once but that chick was just so cavalier about it and unapologetic that I bounced.
Enough of that bitchery and woe. The wife is on the fourth day of this migraine and I am on kid patrol. MR is chock full if sexy right now so I am off to purve once the kids are gone. I have to get another look at perr and the queen since I have only gotten to see their sets on my phone and we all know that a tiny phone screen can't even begin to do perr's ass justice! Well, I survived my meeting even though it ended up being ten hours long. To be fair the last three hours were spent eating and drinking but just with people from work. We spent the first seven talking about food and menus and I am excited to figure out some of the things we are putting on and equally excited to stop making the things that are coming off. The dinner was at the same place the wife and I ate Saturday. The owner had heard about my dinner and heard the sales girls talking about wanting do do that sometime when they were feeling rich. The owner and I were the first to arrive at the place and he asked me if I thought the girls would enjoy the tasting menu. I said "yes if you want to spend the money and time they would love it" He bought his own wines which were amazing except the one that was corked and tasted like crap. It was fun to watch the sales chicks eyes light up when they guy described the courses, just like the wife's it was cute. It was very similar to Saturday's menu except the was are rabbit course and a hangar steak course. No sausage or shoulder. Instead of the ice cream sandwich the last dessert was flour less chocolate cake which was very rich. I could get used to eating like that all the time and really for being a bit excessive it is probably better for my than my usual fare.

The wife has been wanting "toad in the hole" which is essentially french toast with the middle cut out so you can cook and egg in there. I wonder if I could make a waffle version of that.
