Probably winging further down the Spanish coast from there plotting a route to Marrakech. Or I may turn north and head for Scandinavia by way of BeNeLux (Amsterdam, Luxembourg City) and save Morocco for later.

At least Gothenburg seems to be pretty great place for vegetarians. I am not one myself but I have lots of friends who are and they never complained about the restaurant/cafe scene for vegetarians.
And for relaxing and enjoying your holidays without some tourist shit, then Gothenburg should be perfect. And of course Malmö and Stockholm. And the last one, in there the holiday would be easily much more hectic but then of course, it is all about how you plan your trip and what you want to do.

Nice: Castle Hill (Colline du Chateau)
Go in the morning to experience the fog and the mist up there... fuckin gorgeous. Stick around long enough for the clouds to dissipate and see the best view in all of Nice. Of course no trip to Nice is complete without some beach time. 
Monaco:
If you took some nice clothes, go gamble James Bond style for the rest of us gentlemen. Don't miss the Monte Carlo Opera House, and other spiffy bits of architecture.
Barcelona:
Check out Gaudi's glorious madness. If you're feeling particularly adventurous, you should walk the Santiago Trail.
If you end up going to Scandinavia, please bring home Bang Chau.
