I made the greatest muffins I've ever made in my whole life today, and I would be remiss if I did not share this recipe I created.


Vegan Cherry Almond Muffins
1/2 cup applesauce
1/2 cup almond milk (or whatever milk you have)
1 soft banana, mashed
1 teaspoon almond extract
2 teaspoons vanilla extract
1 teaspoon freshly grated orange peel (or lemon, or none)
3/4 cup sugar (I used half honey powder, half stevia)
1 cup all purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup cherries, chopped (I used thawed frozen cherries cut in half)
1/2 cup sliced almonds
Preheat oven to 350F. Line or spray a muffin pan. (or a loaf pan if you'd rather have a bread!)
Mash banana and mix with applesauce, milk, extracts, sugar, and orange peel.
In a separate large bowl, mix together flours, baking powder, salt, and nutmeg. Add chopped cherries (so they don't fall when you bake everything).
Add the wet ingredients to the dry ingredients and mix together, being very careful not to overmix. It is okay if there are lumps! Fold in the almonds.
Divide the batter into the muffin pan and top with some extra sliced almonds.
Bake for about 18 minutes, or until a toothpick comes out clean. (If you used a loaf pan, bake for about 40-45 minutes)
