I heard that the phrase moshi moshi comes from spirit foxes in the woods. See, I've heard that the Japanese believe in these spirit foxes that live in the woods, but because of the shape of their muzzle, they are unable to say the words "moshi moshi", so by saying that over the phone you are reassuring the person on the other end that you are not a spirit fox.
