Pink Flag- Wire: 12XU: (1977) It sounds like every Ramones song ever made, but done the right way. Its gritty and fuels emotion. Pink Flag is one of my all time favorite albums because of its diversity. Its an album that obviously inspired a lot of other amazing artist. For instance, Minor Treat went on to do a cover of 12XU. I personally didn't care for Rollins Band era Henry, but I did enjoy his cover of Wires song Ex Lion Tamer. The Minutemen looked to this album for inspiration in writing short songs, as well.
Iâm not a fan of eggs. I find them most bearable drenched in hollandaise sauce or ketchup. yesâ¦.ketchup. A little while back, I made and photographed the process of what is pretty much the more dignified version eggs with ketchup.
Poached eggs in a simple tomato sauce.
Previous to this, Iâve never tried poaching eggs. I guess all the things I read about how difficult and confusing it is has lead me to shy away from giving it a shot. By poaching them into a tomato sauce, you run a far less significant chance of screwing something up because its more dense than water. It was a good way to ease into the world of poaching.
This meal was just whipped together out of things around my kitchen, and took about 20 minutes to make. Iâm in love with it. I may marry it. If i do, Jim Ray of Salt & Fat will have to be there, since he introduced us.
I made it using the following ingredients:
a small white onion
2 cloves chopped garlic
half a can of pealed (or diced) tomatoes
2 eggs
I made it like so:
Place the chopped onions and chopped garlic into a small sauce pan with some olive oil. Sauté them until the onions become translucent.
Pour in the canned tomatoes and all the liquid it has to offer.
Bring the sauce to a boil on a medium low heat.
Crack eggs into a bowl and glide them into the tomato sauce.
Let the eggs cook, on a low heat, in the sauce with a lid on until the whites set. (about 5 minutes)
Turn off the stove, take off the lid and let it sit and cook for an additional 2-3 minutes.
Scoop out the eggs with a ladle and place them on top of something delicious like an english muffin, toast, tortilla chips, ect.
Sprinkle with coarse salt and pepper and feed your belly

Though it must be said that i just love delta blues, and Jacks off-key, but emotional, singing is kinda similar to my own. heh, whatever, its all splendid
That does sound good. The one thing I don't like about (real as opposed to steamed) poached eggs is the water that the egg whites tend to absorb. it gives them an odd texture and a watery kind of flavor. This avoids all that altogether by tasting like tomatoes, and the liquid being more dense than water to begin with.
The other trick I have found to cooking eggs (other than when poaching them) is to cook them on medium or medium-low heat, and to cook them until they are just set enough that you will eat them. Overcooked, browned, or eggs cooked too quickly are not delicious.
I use this technique, except I use just enough heat that the butter will foam, and I don't stir "vigorously".
I do something similar with eggs, except mine are more like "fried" but instead of using oil I use tomato sauce or some kind of spaghetti sauce, it's delicious... it's what this reminded me of
Scrambled eggs on wholemeal honey and sunflower seed toast pleeease, with ketchup ketchup ketchup. And boiled eggs with same toast in soldiers... nothing like spilling a hot yolk, um um. I was vegan for 5 years, eggs are SO great. Yolk and offal are good for your fatty brain but I don't wanna know anything more of offal than I do know
