I would love to give you a great cookie recipe...but I just bought a huge sugar cookie mix and cookie kit from the store. Because I'm not that great at making things. <3 Good LucK at finding one... I always look at books at Barnes N Noble n copy the recipes on a sheet of paper.

I recommend snickerdoodles. They're cinnamon-sugary deliciousness.
This Sugar Cookies are great and can be iced to make them all christmassy:
INGREDIENTS
3/4 cup butter (or margarine), softened
1 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ginger
ground nutmeg
DIRECTIONS
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, spices and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely and Decorate accordingly.

To make them vegan just make sure the margarine is vegan and replace the eggs either with packaged egg replacer or with 2 table spoons cocoa butter.
super easy and delish: chocolate coconut macaroons.
mix 3 cups shredded coconut with 1 cup sweetened condensed milk. then add as much cocoa powder as you want (i like at LEAST 4 heaping teaspoons). it's ok to taste the batter cuz there's no egg. mix. roll into balls and drop onto greased cookie sheet. bake at 350 for 15 minutes - done!

1/2 cup sugar, plus more for rolling
1 large egg
1 teaspoon pure almond extract
Apricot, raspberry, cherry or strawberry jam
Preheat oven to 350 degrees F. Line 1 baking sheet with parchment paper or silicone mats.
Whisk the flour, baking powder and salt together in a bowl.
In another bowl, whip the butter and the sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and almond extract until just combined. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.
Scoop the dough into 1-inch balls with a cookie or ice cream scoop and roll in sugar. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.
Bake cookies until the edges are golden, about 15 minutes. (For even color, rotate the pans from top to bottom about halfway through baking.) Cool cookies on the baking sheets. Serve.
Peanut Butter Cookies
adapted from Joy of Baking
1 1/4 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, slightly softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 cup peanut butter (smooth or crunchy)
Preheat oven to 350F.
Sift together flour, baking soda and salt.
In a large bowl, cream together butter and sugars. Beat in egg. Add vanilla and peanut butter and beat well. Add in dry ingredients and beat on low speed until combined.
Drop by rounded spoonfuls onto parchment lined baking sheet.
Using a fork, mark grids on the top of each cookie, dipping the fork in water after each cookie.
Bake for 11-12 minutes, until just beginning to brown on the edges.
Cool on wire rack.

White christmas...not really a cookie i guess...still great for xmas.
3 cups rice bubbles (Rice Krispies)
1 cup mixed fruit
1 cup dessicated coconut
1 cup dry powdered milk
3/4 cup of sifted icing sugar
225 grams copha
drop of vanilla essence
1.Put 3 cups of rice bubbles(krispies), 1 cup of mixed fruit,essence,
dessicated coconut, dry powdered milk and 3/4 sifted icing sugar in a bowl.
2. Melt 225 grams copha in saucepan. Add copha to dry ingredients in bowl
and mix well.
3. Press mixture firmly into a biscuit tray. Set in a refrigerator. Cut into squares.

I found this on Allrecipes.com and it's super-tasty.
Big Soft Ginger Cookies
Prep time: approx 15mins; Cook time: approx 10mins; Ready in: approx 50mins.
Makes 2 dozen (24 servings)
2 1/4 cups all-purpose flour
2 tsp ground ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tbsp water
1/4 cup molasses
2 tbsp white sugar
1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
2. In large bowl, cream together margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
Sarah Kramer has the best no-bake cookies ever in La Dolce Vegan:
1/2 cup sugar
1/2 tsp vanilla
1/4 cup "milk"
1/4 cup nut butter (your choice)
1/4 cup margarine
2 tsp unsweetened cocoa powder
1 1/2 cups quick oats
1 cup walnuts, finely chopped
I used raisins instead of walnuts. Also, the recipe says to melt the sugar, vanilla, milk, nut butter, margarine and cocoa powder together before adding the oats and walnuts, but I just mush it all up in a bowl, because I'm lazy. Either way, put cookie-sized globs on a sheet of wax paper, pop it in the fridge for an hour and you've got some tasty treats!
