note: "safe" way to peel ginger, certainly, but i gashed my thumb open after peeling it when i was cutting it into pieces to put in the freezer. also got ginger juice IN MY EYE. fuck.
I cut it into short, symmetrical cylinders and place a flat side on a chopping block so it has a sturdy base and simply slice down the long sides all around with a sharp paring knife.
Ouch I did something just as stupid yesterday, I had just finished all the prep for a meal and then ended up slicing open my finger on a can when I went to put the rubbish in the bin.
Well, when you use a real sharp knife you can get a very thin sliver on the stroke. When I'm cooking Chinese I tend to use a cleaver to flatten quarter-sized slices flat and then the skin kind of rolls off. I think you might need a micrometer to determine the difference between the sliced shaving and the amount of ginger lost when you basically scrape the skin off with a dull spoon! A good potato peeler probably takes a shade more but ginger is pretty cheap in the scheme of things.
