Like a lot of people, I've had trouble finding my niche in life. I knew that I was terrible at math so I went to school for massage therapy, where I never need to use math. The thing is though, that it isn't what I WANT to do. Sure, little work for a lot of pay is great (I actually don't make that much because I work for Massage Envy) but it's sooooo boring! I'm stuck in a tiny dark room with a stranger for an hour, I go wash my hands and do it over and over. If there was a window or something it might not be so bad but the repetition and close quarters are starting to drive me nuts. I do sometimes get a cool client who makes my job enjoyable but most people just fall asleep. Anyway, I always knew that I wanted to do something with art. I love to draw, paint, read, write, sing, dance, whatever. If it has to do with art, I'm down. But see, the phrase 'starving artist' is hard to get out of my mind. It's extremely hard to make it in the world of art and I know that. However, yesterday, I was inspired. I LOVE making cakes and I've tried to make a job out of it before but I'd never had the right angle or even the drive. I'm afraid that once something becomes my job that I won't like it anymore but as the saying goes "If you do something you love, you'll never work a day in your life". I think I've found my niche. In Scottsdale Arizona there's an AWESOME cupcake shop called Sprinkles. I thought "Eh, I'll go get a cupcake, why not" not expecting anything out of the ordinary but OOOHHH I was wrong. Those were the most delicious cupcakes I've ever eaten! I had 3 lol. My favorite was the coconut flavor...mmmmmm. When you think about cupcakes you think chocolate and vanilla. That's about it. They had coconut, carrot, red velvet, black and white, peanut butter, marshmallow, banana, lemon, pumpkin, orange, the list goes on. So not only do the cupcakes taste amazing and look adorable, you can buy the mix and everything comes in eco friendly, super cute boxes. As soon as I ate that first damn cupcake I knew that this is what I wanted to do. No, not work at Sprinkles, I want to make my own cupcake business. Obviously I can't do it right now because I don't have the funds and I'm well aware that I'll have no profit for the first 2 years but that can't keep me from planning it! I'm going to come up with a ton of cupcake ideas, box designs, even uniforms. I said to my boyfriend as a joke that all the employees should wear really tiny outfits but now that I think about it, that's a pretty good idea lol. Nobody goes to Hooter for the wings! And everyone knows about the coffee shop that employees girls who only wear bikinis to work. Stemming off of that, my boyfriend had a pretty cool idea that we could employ SGs and Hopefuls. Only problem there is finding SGs and Hopefuls who live near us and want to work there lol. He also proposed that I name the place something like 'In The Pink' which I think is a little too dirty but you get the point. My favorite idea of his though was to name the different flavored cupcakes after some of the SGs. There might be some kind of copyright law against that though. Well anyway, if you get a chance, go to Sprinkles! They have locations in Beverly Hills, Chicago, Dallas, Houston, Newport beach, Scottsdale and Washington DC. If they don't have one near you now, don't panic! Check out the website because they have a huge list of the places they're expanding to. By the way, they were on 'Throw-down with Bobby Flay' on the food network biggrin

Here are some of the newer additions to my pastry collection, made before I'd been to Sprinkles:

I made a Carrot cake for Easter. Carrots, rabbits, makes sense right? Welllll it wasn't too stable because carrot cake it really moist and it doesn't take well to having it's internal structure removed. It collapsed right after these pictures were taken, but it was still delicious blush

I too like to back cakes XD

If you are using a tub o frosting you should put it in a ziploc bag and cut one of the corners off when you do the tops instead of your standard knife. You can get a bunch of different effects depending on how big you cut the hole. It tends to make them look cleaner.

Have you been living under a rock? The cupcake thing came and went like three years ago. It'll practically be retro in two years. You're really talented and creative. Come up with a new idea, all your own, and make it happen!

That's a great idea!!! We have a cupcake shop locally that's called "Hey Cupcake!" and they have red velvet cupcakes to die for! Maybe in 20 yrs when I retire that's what I'll do----drive around Canada and the US finding all the best cupcake shops smilesmile
