Well I'm getting better each day that goes by. Still in the hospital and today made week three. I'll be here for at least another week too but that's ok. I'm trucking along as best I can. Trying to get my disability paperwork filled out so I can continue makin my car payments and other bills. I have a pretty amazing boss who paid me for last pay period even tho I wasn't working a single day of it.
I'm going back to Arkansas and that is home. I have great support out here and I love San Diego but I want and need my family right now. Unfortunately I have to sell my surfboards because I will have to ship my car home as there is no one to drive it. Anyone wanna buy a board??
Hate to sell them, but really... What am I gonna do with em in arkansas?? Sit them in a pool and pretend??
In other news, my mom had breast cancer surgery six weeks ago and is now in a hospital out here in Diego. Doc had to remove a tissue expander she had as it was infected. I swear I need to write a book about all this. It's been so damn crazy! A mother an daughter fighting out cancer at the same time. Ha!
Luckily mom should be back in a day or so and is doing well.

My doc allowed me to have an apple, koolaid and some vanilla milkshake. I promise that you have no idea just how yummy a vanilla shake is when you can't have them. Things in life look a lot different to me now and I'm loving that.

so I'm considering starting a personal blog to track a huge life change I'm making. I'm seriously changing the way I eat.
I'm eating out less, eating less meat (a LOT less) cooking at home more,and using organic products. I'm tired of feeling sick and having stomach aches all the time and I really think 90% of it is due to how I eat.
So I'm gonna track everything too, to include fast food and restaurant trips. I've downloaded several apps to help me steer clear of high fat foods. Lets see how this works.

Oh and tonight?
It was grilled cheese sandwiches with organic tomato soup and baked french fries. mmmmmmmm! the tomato soup is one I found at Sprouts. it is amazing! it comes in a box that looks like a juice box. i can't think of the brand right now...


so, dairy is staying, but actual milk is out unless needed for a cooking recipe. no more milk in my cereal. it makes my belly hurt too much in large amounts like that. I won't be giving up eggs but, in all fairness, I dont' like eggs unless they are scrambled anyway so I rarely eat them. I am, however, going to try using egg substitutes in cooking and see how that works out.
Luckily, the bf has agreed to do this with me. (but, i told him if i made something that tasted horrible, he didnt' have to suffer with me and actually eat it. He laughed.)
I've enlisted the help of one of my best homegirls, Taye to help get me on the right track. she's gonna hook me up with some recipes, suggestions and ideas.

Sorry guys, not going vegan or vegetarian, as I love steak and Chick fil A waaay too much. Just cutting down on the meat intake....a lot!!!

Actually, I haven't had any meat today at all and i'm quite proud of myself. I have a horrible migraine, but I think that's due to lack of caffeine and diet change. It too, shall pass, right??

Are you like me?? Where...you hate to cook but loooovve to eat home-cooked food?? weeehehehehehehhelllll

got some fast recipes I'll share with you!!





Zesty Italian Baked Chicken
Marinade 2 Chicken Breasts in Zesty Italian Kraft dressing. (I usually throw it in a ziplock bag at lunchtime and refrigerate. I also make a tiny cut into the breasts and pour some inside.)
Bake for bout an hour on 375
Top with a light drizzle of extra dressing.

Easiest meal ever and soooo good

Lemon Garlic Chicken
melt a stick of butter.
toss in a bit of minced garlic
One sqeeze of lemon juice
salt and pepper
(this all is mixed into the melted butter. I buy pre-minced garlic to keep my hands from smelling and makes it faster.)
Take a small bowl and put some all purpose flour in it.
Mix in some parsley and paprika. (VERY little paprika here..)
dip chicken breast into butter mix then roll in flour mix
Drizzle butter mix on top, as much as you prefer...keep in mind you're cleaning it out of the pan later, too. heh.
before baking, sprinkle paprika on the top (however much you want.)
Bake for an hour. (or sometimes i'll fry it in veg. oil if i want it done faster, but it tastes different this way.

Strawberry Salad
1 bag of fresh spring greens (the fancy leafy stuff, purple, etc.)
chop up some strawberries
add walnuts if you want,
top with Balsamic vinaigrette.
MMMMMMMmmmyum!!! my BF even loves this and we are talking about a guy who won't eat any other dressing than Ranch. biggrin

ugh. i really want to lose weight and tone back up. but i hate working out. er rather, don't have the money to afford a gym membership. any suggestions?
