thats hard to answer. Most animals that would be nice to turn into usually arent apex predators and if they are then humans are scared enough of them to try and kill them on site.
Bears are out because beyond shitting in the woods, rubbing your back on a tree or scaring the aforemention humans there really isnt much to be had. That goes for most big land predators though.
An ocean going animal would probably be the best one to pick since it offers a built in safety net if you happen to go overboard on ship or are on a boat that capsizes.
A bird would probably be nice but considering the smaller ones tend to get eaten by the bigger ones and the bigger ones tend to get shot by humans there would definetly be a risk in being a bird.
eh... If i had to go with one animal then I would pick a horse or a great white shark more than likely. A horse for the travel ability over land and since most people dont eat horse meat in america I would be safe from the butcher, a great white shark since it is the apex predator of ocean and unlike an orca I wouldnt need to come up for air exposing me to potential hazards from humans. Plus free travel to any island and all the seafood I could eat.
But the most important thing we can take away from this thought excercise is that if anything humans are dicks that kill anything that moves.
Probably something nefarious, or I could charge ski resorts to keep their lodges open or boost the snow on the ground if a season gets off to a slow start.
