I've had a vasectomy for a long long time. There is absolutely no change in the ejaculate a/k/a semen. What you see and taste is the seminal fluid, which is manufactured and stored in the prostate gland. Sperm are microscopic, and cannot be seen with the naked eye. Their absence, causes no discernable change in the volume of the semen ejaculated.
