Ha, I saw them at my first concert when I was in 8th grade... They opened for Weezer (ahh, the Blue Album days) and No Doubt ('member when she was part of a band?).

They had an interesting song about a spork.

Two that have not been mentioned as of yet:

Gillian Welch, who is both a brilliant guitar player and songwriter. She plays the kind of bluegrass/country/blues music that makes me want to own a pair of cowboy boots.

Bic Runga, from New Zealand, though recently relocated to the UK. She writes the most heartbreakingly beautiful songs, and sings them with such a clarity and innocence that it's nearly brought me to tears on more than one occasion. This is what pop music should be like.
