I was talking to some dude who mentioned some bands that I have now forgot so it got me wanting to check out some bands of this genre. What better way than to ask THE PEOPLE what they like. Thanks
Kamelot would be classified as Power Metal but not in the traditional "we're off to fight the dragon" sense. They have elements of progressive metal as well.

When I hear the term melodic hardcore, I think of a few bands, older and newer.

I guess that covers melodic hardcore. As far as melodic metal goes, I think those two words belong in the same sentence like the words "christian" and "punk" belong in the same sentence. Confusing.
If the Grammy's are any indication, I believe that the band you are looking for is called Jethro Tull. They fit that description. According to the Grammys.

Given the choice between "Blow Up Your Video" by AC/DC, "Cold Metal" by Iggy Pop, "Nothing's Shocking" by Jane's Addiction, "And Justice for All" by Metallica, and "Crest of a Knave" by Jethro Tull, the 1989 Grammy Award for Best Hard Rock/Metal Perfomance, Vocal or Instrumental, went to Jethro Tull. Given the one-of-these-things-is-not-like-the-others nature of the selections and the victory, to call the award controversial would be an understatement. Really, it's a black eye the Grammy's have never really shed in their quest for legitimacy.
even some black metal can be put in the melodic metal class, as are lots of operatic metal bands....there is such a huge spectrum of music when you say melodic metal
