I know what you mean! I've been able to 'go back' many times, but it's taken a lot of time and effort to do so.

I've done it. Several times. 
I use temporary black dyes (the kind that say they'll wash out in 28 shampoos), and when I want to be blond again I go over my hair several times with a color remover like Loreal ColorZap. That gets just about all the dark dye out without damaging your hair like bleach does. Then to bleach my hair I just do short sessions of a weak bleach mixture and then use really intense conditioners for about a month (TiGi BedHead "Dumb Blond" hair treatment is really great).
