Ugggh. A lot of things in Mexican cuisine gross me out. My family is from Mexico (and spain) and a lot of the stuff they eat makes me nauseous. And they all think I'm nuts because I don't really eat meat.
And may I just add, head cheese is 
. Although it does remind me of Texas Chainsaw Massacre, which is ok.

yup. its delish. I even fooled my mexican dad, who has eaten chorizo atleast twice a month almost all his life.
