Raw animal protein is usually served with or marinated in a sauce with a high acid or base content, such as wasabi, citrus, or vinegar. This helps to kill the bacteria that are inherent to raw foods.

I think there is something ya'll aren't thinking about.

Why is the raw fish you get at a sushi restaurant so nummy and healthy and doesn't make you sick? Its high quality, clean meat. Its not from some factory farm that barely passes USDA standards.

Beef that is raised in the same quality conditions is no more dangerous.

Would I eat a cheap cut of raw beef? No, because I dont know how it was raised or slaughtered.

But natural, grass fed, kosher butchered sirloin? hell yes

The problem is this: if this is declared a proper fad diet, we're going to get a bunch of well-intentioned but non-thinking enthusiasts going out and buying six-day-old meat at Vons, eating it out of the package, and wondering why they're getting sick en masse. frown

The issue isn't so much how it's raised as how it's handled. The danger of eating raw meat comes from bacteria that has grown on the meat since it was slaughtered. A hunk of beef sitting on the shelf at Ralphs has simply been in the pipe longer, and is thus likely to be more contaminated, than a piece of sushi that is very fresh and cleaned and butchered immediately before use.

That's why "raw" beef dishes like beef carpaccio are briefly seared- this kills the bacterial on the surface of the meat and renders it basically safe to eat.

The way it is slaughtered is also an issue. Animals often have feces in their colons at the time of slaughter and if the slaughterhouse worker isn't careful their colons can open up onto the meat. Read all about it in Fast Food Nation.

When care is taken, raw meat can be safe. But it's a risk.

Most raw foodists are vegan, by the way, and many have AWESOME results with it. I didn't, my body didn't like it at all, even after being given a chance to get used to it. But everyone's different... most people, as I said, do great on raw vegan. Just to clear up raw's name a little...

Thin slices of raw beef marinated in balsamic vinegar is an Italian delicacy is it not?

I'm not going to judge. Personally, I'm on the 'Sensible, Varied Diet for Non-Neurotics' and it is working wonders with me.

I think that's beef carpaccio? Not sure about the spelling.
Good stuff.
Raw beef is quite tasty.

From http://www.foodsafetyline.org/english/pdfs/Marinating.pdf

The acidic liquid tenderizes the food but does not destroy any bacteria which might be present.

I'll eat any kind of raw meat, so long as it's fish and being served by a reputable sushi resaurant.

Leave something thinly sliced enough in acid for long enough and it's starts to cook it. Ie, Herring rollmops. As for bacteria... use bleach.

Until youve had the joy of eating thin sliced japanese beef with a slight drizzle of chili oil, don't talk to me about how "horrible" raw meat is.

And if my steak isnt cold in the center, you've over cooked it.

You tell it sister.

I've never been sick from eating 'blue' steak or raw 'yukke' at japanese restaurants.... and often raw or rarer beef feels much better in my tummy than cooked beef.

Just my experience.

Vinegar works just fine on bacteria.

It worked for eons with our ancestors and every other meat-eating animal on the planet. whatever Certainly you need to be careful with your sources - as with Sushi - but it really is not that insane of an idea. I mean, I would rather accept that eating raw meat is better for me than consuming the insane amounts of sugar, salt and oil that most people do.

Because of eating raw meat, of course. whatever
