I love nearly everything Chinese (but only if it's good Chinese - the less greasy it is, the happier I am). I had a Vietnamese squid and rice dish a long time ago (sorry, I don't know what it was called) that was fucking phenominally good. I can eat the living hell out of Japanese food (but I'm not a big sushi fan - they really do eat more than just sushi in Japan, honest). I'm not too keen on Thai, though. Maybe I've just had some bad Thai experiences, but I just couldn't get into it.

My favorite places always seem to be Thai/Lao. I like to order the curry squash or spicy noodle dishes. I love any Thai curry be it green, red, yellow, mussamun, etc. My current favorite place makes this dish called "basil noodle" that is to die for. And this place has been closed for the last month b/c of a "family emergency in Thailand." So I'm pretty much jonesing for the stuff right now.
I like it all, but Vietnamese and Thai would probably be on the top of my list. I haven't had much Japanese outside of sushi to honestly render an opinion there. But all that stuff they make on Iron Chef looks pretty damn good.
