I roasted a pork loin the other day and when I went to eat it I realized it was still pretty rare in the middle. I contemplated putting it back in the oven, but I'd already sliced it so it would've ended up all dried out, and plus I was hungry. So I said fuck it and ate it anyway. And it was damn good. And I didn't get sick. But I did have some pangs of fear and regret immediately afterwards, like shit--- was that really such a good idea?

But I got food poisoning recently from a Papa John's pizza, and it didn't even have any meat on it. So I think all food is potentially dangerous and there's only so much you can worry about it and so much you can do to prevent it. I mostly say "fuck it" and eat stuff that I like and try not to think about it.

I'd worry far more about ultra-processed foods like papa johns than I would about the rare pork loin. Not to make you insane, but eating raw pork can cause trichinosis which can take a long time to present symptoms.

But you have to be eating pork that comes from pigs that weren't raised very well. These days it's not likely that you'll have any problems. Very very unlikely.

How about sushi? wink One of the biggest concerns in the kitchen is probably fresh mussels - they go bad pretty quick...

yes... i think about it everytime... and shrimp is my super extreme favorite seafood... but yes... every time i lift those little critters to my mouth... i think death, death, death, death, death tastes soo good...

i've eaten raw shrimp/praws with wasabi, very good, and no puke I guess you had bad luck. frown

I know I said "some", but I really ate A LOT of them. That might have had something to do with it. I was really REALLY hungry....and I didn't know they were raw...

It never crossed my mind that people eat shrimp raw (on purpose! blush ). Ya learn somethin new every day! smile

i always wondered how so many people eat shrimp but the vast majority of westerners still think it's distuging to eat say a healthy locust or other large insect.
not that i eat locust but i really don't see the difference between eating shrimp and locust.

The Pork industry has really cleaned up their act alot in the last few decades to the point that I wouldn't worry so much about uncooked pork (not that its such a great idea)
But if your spending a weekend in mexico, I suggest EXTRA-done.

As for shrimp, get a pot boiling, add salt, paprika, black pepper, cayenne, celery seed, cloves, garlic powder, onion powder, onions, lemons, corn on the cob, red taters, and throw those shrimp in der!!! Boil for a minute for each pound added, then removed, throw some newspaper on a table and throw the strained shrimp/taters/onions/corn on the table!!! Good times.

Its important that once you twist the head off, that you suck out the brain matter, it really soaks up the spices.
