I'm going to give it a try for a couple of months or so. I don't mind not eating meat, but I'm having trouble with giving up eggs and dairy. Any suggestions to make the transition easier? Any good Vegan restaurants in Chicago? Recipes or recipe resources?

i like this book by juice for life but i love the restaurant so... it has great recipis but some can be a bit complicated...but SO good

No, no, no. It is a comment particular to my personal diet. I eat potato, chic peas, soy beans (in edamame form), I've eaten peas and corn before but only if I couldn't possibly get through the samosa without eating them. I eat almost NOTHING that is available for vegan consumption. That's why.

Only if you planned to be a vegan from the beginning. If you just planned to eat healthier, veggie would be all the way there.

I've tried to be vegan 3 times. I think it just doesn't work for some people. I get very depressed, slow, fat (yes fat!), and grumpy despite taking all the precautions they recommend. Now I just make sure that I get animal products from nice happy free range farms. I still wish I could be veegs though. I feel bad for the little guys in cages.

Good for you! Chicago Diner is an excellent place for vegan food. Check out the Veggie Group, there's loads of helpful advice and nice people.

I don't know a whole lot about being vegan, but try to make sure you eat lots of soy. Soy is the only protein besides animal protein that is considered "complete" and has all the amino acids your body needs to stay at its peak.

As a vegan...
don't touch those substitutes. No fake meat, no fake cheese... it's not very good anyway, and you'll just compare it to the meat version and it will lose because it's not meat. These things can be introduced later when you're used to being vegan (I don't know why you'd want to, but whatever).

For protein, you're looking at beans (including soy like tofu if you like) and nuts and seeds. Try out almond butter and cashew butter and other nut butters, yum!

Calcium and iron: eat a lot of veggies, especially dark leafy greens.

If you'll be vegan for awhile, get B12 supplements... it's the only supplement you need.

My pretty basic meals are usually some kind of bean, some kind of grain, and lots of vegetables. For example (this is awesome)

Add 1 part buckwheat goats or quinoa (or rice, but it's less fun) with 1.5parts water in a pot. Bring to a boil, reduce heat and simmer until water is absorbed. Btw, rice will need about 1 part rice to 2.5 parts water.
Meanwhile, fry some onion and garlic in oil. Add whatever veggies you like. Keep in mind carrots and potatoes need longer cooking times... peppers need just a few minutes. Add some beans... chick peas or lentils are my favourite. When it's near done, mix it alltogether and add lemon or lime juice and chili powder. MmMm.

Another good type of food is curries... see vegweb for all your vegan cooking desires smile

By the way, good luck... when I went vegan it was an amazing change. More energy, nicer skin, shinier hair, I could focus much better and so my grades went way up... I see a doctor a few times a year and she agrees I'm in perfect health. (I've been vegan about 3 years nearly

Go vegetarian first. Go to the bookstore and gets some books on this lifestyle. Learn what you need to be eating and how to eat it before you transition to vegan. It will increase your ability to stick with your choice of going vegan. There are risks if you try being vegan without knowing the ins and outs.

Thanks. That's useful. I agree with you on the Fake Meat. What's the point. I work with some people who's religious beliefs prohibit eating meat, and it's a constant parade of textured soy meat substitutes. It's like agreeing not to have sex, but screwing a blow up doll. Why not just have sex instead.

Soy in large quantities is pretty suspicious. There is evidence it can contribute towards thyroid disorders, for example. (If you eat a lot of soy, at least eat lots of seaweed too as it's good at regulating thyroid function)
I avoid soy altogether... I sometimes eat tofu, and occasionally drink soymilk, but I usually stick to beans and almond milk (or rice milk).

If you eat a varied vegan diet you get everything you need except B12, Don't worry about getting all amino acids in one food, it's fine as long as you get them all at somepoint or another. Don't worry about this, just eat lots of fresh fruits and veggies, whole grains, nuts and seeds and beans.
