Thank you for writing this. It's put a lot of my thoughts into coherent words... now I finally know what to say to people that ask about fake meat!

As a quick note on something that bears repeating:

Always salt that eggplant, folks. Always. My opinion is that many people think they don't like eggplant because a surprising number of people try to cook eggplant without salting it.

Oh and great recipe to start out with. Eggplant is such a wonderfully verasitile veggie!
