my beau makes this incredible tofu that he marinates in italian dressing for a couple hours before frying up. then he makes this incredible pesto (if you have access to basil try and make it fresh with just basil, pine nuts, olive oil, a little salt, garlic) and make some fancy noodles (like buckwheat or something). it might be expensive though if you don't have your own little basil tree...

...but you should check out www.vegweb.com cos they've got TONS of vegan recipies. and a bunch are in the "quick and easy" section.

I can make a mean breaded Buffalo chicken breast -- but that's about as vegetarian as a t-bone steak, so nevermind.

Nothin says lovin like grilled portabello mushrooms and a nice resotto or nice stuffed red bell pepper and a mixed green salad w/ a simple oil and balsamic dressing.

or maybe a simple shared rustic sandwich made from a nice bagette split and spread w/ a tomato paste and slices of fresh milk mozzarella w/ leaves of fresh basil. Add a salad or even some kettle chips and a bottle of Papst Blue Ribbon and your set.

Mmmmm. I'm hungry now! love

I saw an amazing menu on Oliver's Twist on the Food Network the other night. Click Honestly, he's a GOD in the kitchen. This menu included portobello "steak" sandwiches, a killer mushroom pasta dish, and a really nice dessert. Check it out:

Hmmm, that's a tough one. Most of them are rice based, but I don't see why you couldn't improvise with chunks of marinated and fried small chunks. I will look around, but I'm kinda out the door to seattle so I don't think that I am going to have time. frown

BTW. Portabello steak mushroom samiches ROCK!

I'm making veggie spaghetti tonight. It's basically just everything that spaghetti normally has without the nasty beefy chunks. To make it chunky, I just use mushrooms, which soak up the herbal flavors better in my opinion.

If you are making tofu, make it like the Thai do. I don't eat tofu unless it's Thai. They just make it damn tasty. They cook it WELL so it's nearly crispy on the outside. Marinade 3/4" chunks in teriyaki sauce or some other tasty oriental marinade, and when they are soaked through, saute them until brown and nearly crispy. This goes really well with sauteed vegetables like snow peas and bamboo shoots and carrots and maybe some bok choy. Then place on top of cooked brown rice or jasmine rice or any sticky rice (uncle ben just doesn't cut it), and drizzle some marinade on top. Marla loves to cook, if you did'nt notice already.

tonight i made the rockin'est curry, with the help of pataks vindaloo curry paste, found at indian food stores...

so here's my quick and dirty recipe:

a jar of pataks vindaloo curry paste
1 can of coconut milk or cream
8 smallish potatos, 6 large ones
2 small heads of brocolli
a large fistful of green beans
a zucchini

chop your potatoes into quarters and stick them in a pot of boiling water until ALMOST soft. not quite soft enough to munch on directly.

while the potatoes are boiling, mix the coconut milk and the appropriate amount of vindaloo paste together. i use like 1/4 of a jar in one go, but it makes REALLY HOT curry that way. so read the instructions.

wash and chop your veges into bite size pieces.

in a large pan, stick your drained potatoes, the curry and coconut milk mixture and your veges, simmer on medium for about half an hour with a lid half covering them. for crisper veges, leave them out and just simmer the potatoes in the curry sauce for 15 mins, and then add the veges.

serve on basmati rice! how easy was that?

tofurkey sandwhiches on wheat bread with deli mustard and all the other fixins... in my opinion nothing beats a great sandwhich....... but i do live offa top ramen and tuna

risottos are pretty easy to make...

1/4 stick of butter
small onion, chopped
1/2 glass of white wine (i prefer chardonnay)
3/4 cup arborio rice
3 cups vegetable broth
a selection of vegetables -- peas, squash, green beans, red peppers and zucchini are my favorites to add (stay away from sun dried tomatoes as they are too messy)
an extra pinch of saffron if you really love him/her
grated parmesean cheese
a bit of chopped basil, oregano, parsley adds wonderful aroma

melt butter in large pot... add onions, sautee for three minutes... pour in wine, allow to evaporate. add rice and saffron and coat in mixture for a minute (let the rice heat through until its transparent in the center), then ladle in the broth one cup at a time (wait for the rice to soak it up completely before adding another cup).

while folding the broth, butter a sautee pan and cook the vegetables until tender... as soon as the rice is cooked through and gooey, turn off the stove, add vegetables and herbs; stir. grate some parmesean cheese over the risotto and allow the pot to sit for a few minutes before serving. add pepper and another sprinkle of cheese once it's on the plate...

oriental as opposed to occidental marinades? whatever teriyaki is more american than thai....
the koreans do a rather delightful spicy tofu hot pot.
