White cake, white frosting. I'm totally lame like that.
It's not a cake, but I do love Lemon Meringue pie.

Edited because I looked up how to spell Meringue. biggrin

My favorite is a buche de noel, which is a French Xmas yule log cake. It's different from a regular yule log because the sponge cake part isn't very sweet, and the icing is really, really, really rich (usually heavy on the butter, chocolate, and coffee flavors). I wish for that for my birthday every year, but since it's in July, I have yet to get it frown

May this year! *crosses fingers*

Texas Chocolate Sheet Cake

Cake:
2 c sugar
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 sticks margarine (I say butter, but I'm going with the printed recipe here.)
1 c water
1/4 c cocoa
2 eggs, beaten
1/2 c buttermilk
1 tsp vanilla

Sift flour, sugar, salt, and soda. Set aside and melt margarine. Add water and cocoa to melted margarine and bring to a rolling boil; set aside for a few minutes.

In a small bowl, beat eggs lightly. Add buttermilk and vanilla. Combine with flour mixture. Add hot cocoa mixture and turn into a large cookie sheet (15x10x1"). Bake at 350 for 20 minutes or until a toothpick comes out clean.

Icing:
1 stick margarine
1/4 c cocoa
6 tbsp buttermilk (or 1/3 c plus 2 tsp for easy measuring)

Combine these three ingredients in saucepan and bring to a boil. Then add:

1 box sifted powdered sugar
1 tsp vanilla
1 c chopped walnuts

Beat until spreading consistency is reached and spread over cake while still warm.

*Spread icing over cake while warm, not war. Heh.*
