I used to be a cake person, but over years of holidays at my girlfriend's house I would have to say I've acquired a real taste for pie. Cake is okay, I guess, but for me cake is a "single desert" kind of thing: for each desert there is usually one cake (or at least, that's been my experience). Pies are pretty easy to make (or, perhaps I should say, faster to make) so people tend to make more of them per desert event. My family isn't a real big pie making family, but there are always like two or three pies. If the oven is really working at my girlfriend's house, though, I might have the opportunity to eat maybe five or six different kinds of pie over the course of one desert. Ultimately, I really like desert. I also like variety. For me, the algebra behind this goes as follows: Cake=one kind of desert. Pie=many different deserts to choose from. Pie=I get to eats lots of different kinds of desert. To be a little more specific, I think I like pumpkin 3.141592653589793238462643383279502884197169399375 the best.

One of the hazards of having written a book about switching from Pie to Cake is that people ask me questions. Recently, I've heard the one above from two friends, as well as a guy I met while doing a "Meet the Expert" visit at a local Bakery. My response? You have to want to switch.

If you aren't ready to make that trade-off, stick with Pie or, at least, keep a Pie around just in case. But if you're willing to explore a little, a Cake can be excellent.

and there is something about cherry pie that I think is absolutely sexy, but I can't pinpoint it.

Yeah, I see that. Maybe the connection between innocence and youth, ie, the cherry = virginity. Add to that the tactile sensation of the gooey cherries traveling across your tongue. The warm, sticky juice trickling down your chin. The hole in the middle, showing up red and warm and inviting.
