Ame, we used to go to Tijuana (mostly Margarita Village because we never paid a cover) when we were teens and before I had any clue as to the Spanish language.
I had eaten both lengua and cabesa tacos trip after trip before finding out what they were.

I'll still eat lengua though.
Eeeeeew.
But yeah...everyone in my family (on my Mom's side, most are from Mexico) eat ALL this stuff at family gatherings. I usually end up sitting there with nothing but posole because everything else is animal leftovers. Blech.
What I love about Hawaiians is that they're Americans, yet a seperate culture (to some degree) and geographically isolated.
They have their own cuisine. And being that Hawaiians are even more American that the rest of us Americans on the Mainland, they take all kinds of cuisine, mix it all together and bastardize it into something that's entirely their own.
We took took hamburgers, frankfurters, pizza and various Mexican foods and warped them into our own versions.
Hawaiians take their native cuisine, American white trash food (hamburgers, spam, mac salad), Japanese food (teriyaki, musubi and loads of other things), Portugese (the sausages), Korean (kimchee) and blend it into something that's uniquely Hawaiian.
Chicken katsu is deep fried chicken (American) with tonkatsu sauce (Japanese). Mahi mahi (fish) tends to be served with TARTAR SAUCE!
Oh man, I need some kalua pork. Should've ordered that yesterday instead of the loco moko.
Am I the only one who found this to be THE single best line of the article ? I love your articles DG . Wonder if Jone's soda will make any Mexican flavored sodas to try ?
