I've started cooking again, but I'm a bit out of the habit.
Do you have any easy recipees, or any useful hints and tips, to help me?
I'll start with one for a bolognese sauce from the BBC website. (I'm vegetarian, but this is easy enough to convert to meat substitutes.)
Preparation time - less than 30 mins
Cooking time - 30 mins to 1 hour
Ingredients
225g/8oz minced beef
2 tbsp olive oil
1 onion, peeled and finely chopped
1 carrot, peeled and finely diced
1 green pepper, seeded and finely diced (US: Bell pepper?)
1 clove garlic, peeled and crushed
125g/4oz smoked bacon lardons (What the hell is a 'lardon?)
1 tbsp mixed dried herbs
400g/14oz tinned tomatoes
150ml/5fl oz red wine
salt and pepper
Method
1. Heat a non-stick frying pan and add half the mince. Cook over a high heat to colour the meat, breaking up any lumps with the back of a fork. Repeat with the rest of the mince and drain off any fat.
2. Heat the oil in another large pan and cook the onion, carrot and green pepper until they start to soften.
3. Stir in the garlic, bacon lardons and the herbs and cook for 2 minutes.
4. Stir in the tomatoes and the wine and season well.
5. Add the mince and simmer gently for 40-50 minutes until thick. Use to make lasagne or serve with pasta.
I make a vegetarian avocado sandwich that I got at a Donut King some months ago. It's pretty easy. I have never really liked avocado, but this sandwich is still really good somehow. Not really into mustard, either, but it all comes together to taste pretty darn good.
Ingredients:
2 slices wheat bread (or whatever you like)
1 avocado, pitted and cut in half lengthwise
1 or 2 tomato slices
1 or 2 slices of medium cheddar cheese (or whatever you like)
Mayonnaise
Mustard
(optional) Lettuce
Directions:
1. Toast the bread
2. Spread some mayonnaise and mustard on one slice (as much or as little as you want).
3. Cut the avocado half into four pieces, lengthwise, and remove the rind, and place on the other slice of bread, curve side down
4. Place tomato slices on the other slice
5. Place the cheese on top of the tomato
6. Place lettuce on top of the cheese
7. Put the tomato/cheese slice on top of the avocado slice
8. Cut diagonally and enjoy
I got a recipe for Baked Mac & Cheese from a cooking show on Food Network called Good Eats. I have found to be pretty simple although I also downloaded the episode off BitTorrent and followed along when he makes it. In fact most of the stuff I have tried recently have been from Good Eats for that same reason.

Did you try deepfrying your leftovers like he suggested?
Get yourself a bag of frozen chicken. Don't get the breasts, get the strips of breast meat- sometimes I think they say "raw chicken tenders." These make for easy meals because you don't have to defrost them.
Butter a big lasagna pan (or smaller if you're not making a bunch), with just enough butter to keep the chicken from sticking. (Like you would grease a pan for brownies)
Lay the chicken pieces in a flat layer.
Sprinkle on coriander, Italian herb mix (usually has thyme, sage, oregano, rosemary and basil), and lemon pepper.
Put in a 400 degree oven for about 20-30 minutes (just keep an eye on it and take it out when the chicken barely starts to brown at the ends)
Serve with some pasta or rice and a steamed veggie. Mmmmm lazy cooking.
I didn't even notice that dem is a veggie. Stupid me for posting a chicken recipe.
Here's the best damn everyday tofu ever:
1 block firm tofu, drain well
3 Tbs. safflower oil or butter
3 Tbs. soy sauce or Braggs liquid aminos
1/3 c. nutritional yeast
2 tsp. Spike seasoning salt
1/4 tsp. black pepper (optional)
Drain tofu well. Heat oil in frying pan, preferably a non-stick skillet. When oil is hot, add tofu by breaking it into random size pieces about 1" x 1". Cook tofu without turning for about 5 minutes. Turn tofu and cook for about 4 more minutes on the other side. Turn off the heat and add the remaining ingredients. First you put in the soy sauce and stir so as to cover all the pieces of tofu. Then add the nutritional yeast, spike and black pepper. Toss and coat all the tofu pieces.
I actually dice the tofu into about 1/2" pieces. We like it to be chewy and a little crunchy.
LAYER ONE:
Prepare thy grain! Brown rice, soba noodles, and quinoa are my favorites. Cook this.
LAYER TWO:
Prepare thy green! I steam some spinach or kale or chard or other cruciferous vegetable with a little salt. Some nutritionists recommend eating cruciferous veggies at least every other day!
LAYER THREE:
Cube some extra firm tofu and press it/allow it to drain to reduce the water content. Marinate this tofu for at least an hour in a mixture of tamari soy sauce, rice vinegar, red pepper flakes, ginger, garlic, onion powder, black pepper, and a little sesame oil. Heat some olive oil and a few drops of sesame oil in a pan. When hot, carefully place the tofu cubes in the pan and allow the tofu to brown and get crispy on each side.
FIN:
It takes some practice to get everything done at precisely the right moment, but once you're ready, put your grain in a bowl, drop the steamed green atop it, and add the cubes of tofu to the top of that. Garnish with some chopped green onion and toasted sesame seeds. YUM!

Ok, so that I'm not a slacker, here's a recipe for ... something. It's good.
Ingredients
1 roast chicken
nice long grain rice (native american is the best that I've had, but any type of flavorful rice will do, I use Jasmin rice when I can't get anything good)
butter
sliced almonds.
STEP ONE
Cook your rice.
STEP TWO
saute your almond slices in butter
STEP THREE
Pick your roasted chicken apart by hand, and add the shreds of chicken to the almonds, cook briefly.
STEP FOUR
Mix chicken/almond mixture with rice, toss like a salad (no, not that type of salad tossing you sick bastard), serve.
I didn't include measurements because I've never known any for the recipe. Do it by feel.
