It also requires a lot of planning, and we run into an education issue. Not college and what not; basic education about nutrition and home economics. And at the risk of insulting everyones' consciences, many of the poor don't receive the kind of education they need in that regard.



But that would mean they'd have to learn science!

Unfortunately, your post is based largely on assumptions that don't reflect the way the restaurant business operates, or the current market forces. Yes, restaurants will resist price hikes as part of market strategy, but they are no more immune to market forces, even marginal ones, than consumers.

The fact is that there is no way even at wholesale prices to take raw product, add value to it and have it come out cheaper than cooking it yourself. What fast food saves you is the time value of money, because it's going to take you three minutes to get a chalupa at Taco Bell and two or three hours to make your own refried beans from scratch.

You mention lack of empiricism, but the fact is that McDonald's is, themselves projecting a 25% increase in the cost of consumables overhead. Something's got to give somewhere.

roughly you can get 4 bananas/lb, 3-4 apples per lb.

did you happen to look up organic equals on their website? I'm sure they are in a higher price range. When I was on food stamps because I was diagnosed with cancer and couldn't work more then 16-20 hours a week, I took a job at Trader Joes so I could get a discount to feed my family and use my EBT benefits there.
